Hi friends!! So today I made my own almond milk, and if I do say so myself, it turned out pretty freaking amazing. I thought I would share the recipe with you all and some inspirational pics, cause making it yourself is waaaay better for you (think no preservatives, added chemicals, dyes, flavoring, etc.) so read on for the deets!
4 cups of unsalted raw almonds (I get mine from Whole Foods)
A giant bowl and some plastic wrap
A nut bag or cheese cloth
Put all of your almonds in your bowl, fill it with water until all of the almonds are submerged, cover with cling wrap, place in the fridge and leave to sprout overnight (~12 hours). Strain and rinse your almonds, then add them to your blender with 5 cups of fresh water. Blend until the mixture is creamy and white with no visible chunks of almond.
Place the cheese cloth over a big bowl and pour the creamy almond mixture into it, then ring out all of the milk, leaving the almond meal behind. Repeat this process until all of the mixture is gone and you are left with pure almond milk in your bowl. Add vanilla bean (I used two stalks, but go crazy) a teaspoon of vanilla extract, a couple pinches of cinnamon and a veeeery small pinch of nutmeg and stir. Ladle into a large mason jar and pop it in the fridge! It should keep for about three days, and seriously the spice combo makes it super creamy and flavorful.
